ROYALE CABANON: PRODUCT DESCRIPTION

Royale Cabanon is a must. This oyster owes its special flavour and texture to painstaking preparation of the typical, local fattening ponds, known as claires, as well as to striking the right balance for growing (two oysters per square metre). Rearing them in such small quantities provides David Hervé's Royal Cabanon with far greater nourishment than any other oyster. The flesh is virtually identical to Spéciale oysters, but the Royale Cabanon has more of a pearly gloss colour and is even plumper. The Royale Cabanon has a uniquely sweet flavour with a prolonged after-taste. This oyster is in a class of its own.
