IMPERIAL PRAWNS or GAMBAS:

Introduced from Japan, these Imperial Prawns are better known in Europe as "gambas".
Their environmental requirements (temperature and oxygen thresholds) are exactly those found in our region from late May to late October (growth timescale).
One of the positive effects of farming these prawns with oysters, is that the prawns' nocturnal activity raises the phytoplankton from the bottom of the claires. The increased turbidity in the ponds provides the oysters, due to their exceptional powers of filtration, with abundantly rich nourishment.
These delicate and subtly-flavoured gambas have already won the acclaim of many gourmets.
